African Culinary - A Concise Writeup On African Cuisines And Its History

Caribbean recipes are greatly influenced by French, African, American Indian, East Indian, Chinese, Dutch, Spanish, and Indian food cultures. Caribbean cuisine derives its vivacity from its migrant food culture. The migrants improvised their foods based on the availability of the ingredients. Today these foods have become signature identities of the regions where the migrant populations live in large numbers.

Rice is the staple dish of the island, and Caribbeans prepare various dishes using it. Generally a rice preparation is accompanied by tasty sauce or beans. Although rice is a staple diet of the island, still the method of preparation varies from region to another. Mostly coconut, beans, and peas are added as rice seasonings. The yellow and brown colored rice is mainly used as the side dish.

Caribbean cuisine is marked for its meat preparations. Goat meat is savored throughout the island with much fancy and love. Guadeloupean, Haitian, Jamaican and French Caribbean populations enjoy goat meats. Caribbean goat meat stew has been accorded the title of National dish of Montserrat. This tomato based goat meat stew is also the signature dish of St. Kitts and Nevis. Other than goat meat, breadfruit, green pawpaw or pappaya, and dumplings (droppers) are the other ingredients used in the preparation of the stew. Similarly Callaloo is a famous vegetarian dish which is enjoyed throughout the islands.. It is prepared using various types of green leafy vegetables like okra. Anglophone Caribbean, or Cook-Up or Pelau is another popular meat dish which is enjoyed throughout the Caribbean Islands. The fleshy ingredients like beef, pigeon peas, chicken, saltfish, or vegetables are used in preparation of the dish. Other than that goat curry and chicken is popular throughout the Anglophone Caribbean islands.

Caribbeans are biased towards spicy and sharp flavors, because they use left over meats to prepare several dishes. Thus sharp and spicy flavors are used while preparing the dishes. Caribbean's use lime, garlic, ginger, nutmeg and cinnamon to flavorise their food preparations.

Caribbean's are also fond of seafood and various dishes are made using lobster, conch, and sharks. Cascadura fish, crab, and fried shark sandwich are the signature dishes of this green island. Other than that people are cook up various seafood preparations which are inspired by migrant food cultures. Similarly conch preparation is well-liked throughout Haiti, Bahamas and Belize. Deep fried fritters are also lovingly savored throughout the island. The batter for the fritter is prepared by mixing dough, seasonings and minced meat.
